Sausage Roll-ups

Gather Ingredients

• 21⁄2 cups (300 g) all-purpose flour, plus more for dusting
• 1 tablespoon granulated sugar
• 2 teaspoons baking powder
• 1 teaspoon salt
• 1⁄4 teaspoon baking soda
• 1⁄2 cup (1 stick/115 g) unsalted butter, cut into thin slices and very cold
• 1 cup (240 ml) buttermilk
• 1 pound (455 g) bulk Italian sausage or breakfast sausage (see recipes)
• Cooking spray
• HOMEMADE ITALIAN SAUSAGE (mix thoroughly and refrigerate until use): 16 oz ground turkey
• 16 oz. lean ground pork
• 1 Tablespoon Italian herb blend
• 1 Tablespoon fennel seed, crushed
• 1 Tablespoon garlic powder
• 2 teaspoons black pepper
• 2 teaspoons salt
• 1 teaspoon celery salt
• 1 teaspoons crushed red pepper
• 1 teaspoon paprika
• HOMEMADE BREAKFAST SAUSAGE (mix thoroughly and refrigerate until use):
• 16 ounces ground turkey
• 16 ounces lean ground pork
• 2 teaspoons. dried sage
• 1 to 2 teaspoons salt
• 1 teaspoon ground black pepper
• 1 teaspoon garlic powder
• 1⁄4 to 1⁄2 teaspoon crushed red pepper
